This healthy, fresh and delicious paleo pasta recipe is by Sydney-based food stylist and recipe developer Jacob Leung. It’s so simple to make and will take 15 minutes or less, so it’s perfect for a mid week, no fuss meal that’s full of flavour.
Paleo Pasta Ingredients
¼ cup olive oil
400g tinned tomatoes
500g green prawns
3 garlic cloves, minced
1 red onion chopped finely
8 truss tomatoes
- Using a vegetable spiraller, spiral the zucchini and place in a bowl.
- In a large pan over medium heat add the olive oil, onion and garlic. Sauté until soft. Add the prawns and cook for a further 2 minutes. Add the tinned tomatoes and truss tomatoes. Allow to simmer for 5 minutes.
- Add the zucchini and toss the sauce through. Allow to contimue on the heat for 3 minutes.
- Serve immediately with torn basil. Season accordingly.
