Raw Paleo Snickerz Bars

After four straight hours of cramming for my next Nutritional Pharmacy exam with no breaks, meaning no food in four hours! Which is a lot for a bodybuilding girl who eats regularly, I decided to venture to the fridge to see what sweet, carbohydrate laden food I could provide to refuel my poor, overworked brain cells. Only to be met with my brother’s sinfully tempting Mars Bar sitting on the centre of the top shelf staring this Primal budding Nutritionist in the face!

My overworked, exhausted brain was coming up with the most justifiable excuses to rip open that black and red wrapper and devour that sweet, sticky goodness that I swear was calling out to me! So I closed the fridge door and thought to myself, “you don’t like Mars Bars anyway! It’s Snickers Bars that were your fave Pre-Primal days… Mmmm Snickers!”

So while I enjoyed my freshly brewed organic coffee with coconut milk sans chocolate :(, I conjured up a recipe where I could satisfy my overpowering craving for that chocolatey, caramel, nougat and peanut goodness while nourishing myself with good fats and unrefined natural sugars at the same time… Et voila!  My gooey caramel Raw Paleo Snickerz Bar was in the making. I hope you’ll enjoy this Paleo treat just as much as my family and friends do!

Ingredients

Chocolate Base

1/4 cup coconut oil melted
1/3 cup raw cacao powder
2 tbsp coconut nectar or maple syrup
1 tbsp maca powder
1.5 tbsp raw cacao butter

Nougat Layer

1/2 cup smooth raw cashew butter
1/4 cup coconut butter (solid oil)
2 tbsp coconut nectar or maple syrup
1/2 tsp vanilla extract

Caramel Layer

3/4 cup pitted Medjool dates
1/4 cup smooth roasted cashew butter
2 tbsp coconut oil melted
1 tbsp lukewarm water
Pinch of Pink Himalayan Salt

Topping

1/4 cup roasted cashew nuts

Instructions

For the Base

Place cacao butter and coconut butter into a a small bowl or jug. Place this small bowl into a large bowl of boiling water to melt slowly. Stir together with a whisk occasionally until fully melted.

Once melted, mix in coconut nectar/maple syrup, cacao powder and maca powder.

Pour mixture into a lined 6 inch square tin and place in the fridge to set for 45-60 minutes. (Can be placed in the freezer for 20 mins for quicker prep time)

For the Nougat

Place all the nougat ingredients into a food processor and blend together until a smooth peanut buttery consistency is reached.

Ensure the chocolate base has set, before spreading the nougat mixture evenly over the top of the base.

Return to the fridge to set for at least one hour (or in the freezer for around 20 minutes)

For the caramel topping

Blend dates, salt and roasted cashew butter to a smooth paste in your food processor. Add in melted coconut oil and blend to combine. Add 1 tsp of water to the mix as it blends if needed to smooth it out. This might take up to 3 to 5 mins of blending to reach a smooth consistency.

The caramel needs to be spread with a spatula over the nougat layer. Note, it can’t be poured as it will have a thick caramel consistency.

Roughly chop the roasted cashews and sprinkle over the top of the caramel layer, pressing them lightly into the caramel. Return to the fridge to set for 2-3 hours (or freeze for 1 hour) before slicing into 8 snack sized bars.

Store in an airtight container in the fridge for up to 2 weeks. Not that they’ll last that long in your household! Enjoy in moderation :)
