Paleo Chicken & Pine Nut Meatloaf Recipe

  • 1 tablespoon Coconut oil
  • 1 brown onion
  • 2 garlic cloves
  • 1/3 cup pine nuts
  • 750 g chicken mince
  • 1 cup almond meal or LSA
  • ¾ cup fresh basil leaves finely shredded
  • ¼ cup flat-leaf parsley leaves chopped
  • 1 egg lightly beaten



STEP 1 – Preheat oven to 180 degrees

STEP 2 – Combine onion, garlic and pine nuts in food processor and chop finely, careful not to over chop the mixture (if you do not have a food processor do this manually).

STEP 3 – Heat coconut oil in a frying pan over medium heat. Add onion, garlic and nuts. Cooking stirring until onion is translucent. Remove from heat and allow to cool.

STEP 4 – Combine mince, almond meal, herbs, egg, onion mixture and salt and pepper. Mix well. Press mixture into greased baking loaf pan. Bake on 180degrees for 40 mins or until golden.

STEP 5 – Remove from oven, allow to stand for 10 mins. Serve with veggies of your choice.
