Paleo Ice Cream

With all the warmer weather it’s the perfect time to enjoy a bowl of healthy, paleo ice cream. This version uses frozen bananas and tahini to make it super creamy. You don’t need many ingredients and you can make it really quickly. Top with berries, coconut flakes, nuts or your favourite flavours. This paleo ice cream can be enjoyed as a healthy dessert or mid afternoon snack!

Ingredients

frozen bananas
Splash of coconut water
1/4 cup macadamias
1/4 cup shredded coconut
1 tbs cocao
1 tbs tahini
Ice if needed
Coconut for toasting

Method

Heat a fry pan on high heat for two minutes, them remove from heat and pop in the coconut. Toss until lightly toasted.

Blend all the ingredients (except the coconut) in a blender but resist blending too much as you want to keep the macadamias in large pieces.

Top with toasted coconut.
