Not many of us would turn down a homemade chocolate chip cookie, especially when you know that it’s free of all the bad stuff and paleo-friendly! This paleo cookies recipe is also high in protein and uses a 100% natural protein supplement by 180 Nutrition. It was created by one of our regular contributors Keira Rumble.
After returning from a mini-holiday I immediately got a couple of requests for meals. One of them being ‘healthy choc-chip cookies’ from my little brothers. So here it is: my healthy dark choc gluten free protein cookies, did I mention that they are paleo friendly?
Like all of my recipes, I try and make them as healthy as possible. But remember – moderation is key! That didn’t stop my brothers eating two batches of these though.
Chocolate Chip Paleo Cookies Ingredients
1 cup 180 Natural Protein Superfood (coconut)
2 cups almond meal
2 teaspoons baking soda
Pinch of Himalayan pink sea salt
2 tablespoons date paste
1/4 – 1/2 cup melted coconut oil
1/4 vanilla pod seeds scraped
1/4 almond extract
1/2 teaspoon stevia (or rice malt syrup or raw honey)
1/2 cup almond milk
150g 80% dark choc or cacao nibs
Preheat your oven to 160 degrees and line a baking tray with foil or baking paper.
Combine the dry ingredients (180 protein powder, almond meal, baking soda and salt) into a large bowl.
In a separate bowl add the remaining ingredients and stir until well combined. Slowly add the dry ingredients to the wet and mix well.
Shape into small balls and place on the tray, squash down slightly and then pop in oven. Cook for 13 minutes or until deliciously golden. Let them cool slightly on a wire rack.
