This recipe is for paleo-friendly chocolate chia puddings.
Originally these were made as a breakfast item but there is no reason why they couldn’t double up as a dessert or middle of the day healthy paleo chocolate snack. Honestly they are more like a chocolate mousse than a pudding and they take minutes to put together.
Although they only take 15-20 minutes to set I like to make them at night so in the morning all we need to do is add some fresh fruit to them.
This recipe will make five chocolate chia puddings with a little cream leftover.
Place 1 ½ tbs of chia seeds in the bottom of 5 glasses.
In a large bowl, whisk together the coconut milk, water, cacao powder and maple syrup until well mixed.
Pour 150ml of this liquid into each glass and give a good stir to evenly distribute the chia seeds throughout the mix.
Place in the fridge and allow to set for 15-20 minutes or overnight.
Serve topped with fresh fruit and/or seeds and nuts.
