Quick ’n’ Easy Nut Cookies – paleo-friendly

There’s no need to be an absolute legend in the kitchen to knock these up – they’re so easy! Ready in 15 minutes and great for kids’ parties.


2 cups almond meal
1 tablespoon linseeds
1 tablespoon chia seeds
2 tablespoons maple syrup
1⁄4 cup coconut oil
12 walnut halves


1. Preheat the oven to 180°C, then line an oven tray with baking paper.

2. Mix all of the ingredients in a bowl, except the walnut halves, then form the mixture into little round balls, using about 1 tablespoon of mixture per ball. Place the balls on the tray about 5 cm apart and flatten them slightly until they’re about 4 cm across. Press half a walnut on top of each cookie.

3. Bake in the oven for about 10–12 minutes. Remove from the oven and then cool completely on the tray.
