Paleo Banana Walnut Muffins

This recipe was shared by my gorgeous friend Dimi. She makes some amazing treats and came up with this grain-free, dairy-free, sugar-free muffin recipe.

Ingredients

1 cup of almond meal
1/2 cup of shredded coconut (or just add 1/2 cup of more almond meal)
1 tsp baking soda
2 bananas
1 tbls rice malt syrup (or raw honey)
1 egg beaten
5 tblsp coconut butter melted
1/2 cup of chopped walnuts (or as much as you like)
A good amount of cinnamon (I put in about a tablespoon)

Add all the ingredients together and mix well (I used an electric mixer). Then just add them to 8-10 cupcake cases, and bake for about 20 mins or so.

Done and delicious!
