Easy paleo banana muffins (nut free)


To celebrate Food Revolution Day, I got in the kitchen with my nine year old nephew and my two year niece to do some baking.

My nephew and niece love bananas, so we decided to cook healthy banana muffins. This recipe is paleo-friendly (of course) and completely nut free so safe for you to pack in lunchboxes for kids to take to school. It’s really easy and very quick to make.

Fun fact: coconuts are not actually nuts, so don’t be concerned about the coconut ingredients used in this recipe.

  • 4 x free range eggs
  • 4 x bananas, mashed (the riper the better)
  • 1/2 cup coconut flour
  • 2 tablespoons raw honey
  • 2 tablespoons coconut oil (melted)
  • 1 teaspoon baking powder
  • 1/4 teaspoon each of nutmeg and cinnamon
  • Pinch of salt


With a hand held blender, mix together all the wet ingredients until smooth. Add the dry ingredients and blend until combined.

Spoon into pre-greased muffin trays or muffin cases.

Cook in the oven on 170 degrees celcius for 20-25 minutes (until golden brown).

A little tip – pre-heat the oven about 10 degrees hotter and then turn it down when you put the muffins in.

Makes 12 small muffins.
